With a sustainability-trained architect for an owner, Casa de Uco was built with its natural surroundings in mind using local, natural materials to blend with the Uco Valley. Ultra efficient heating systems are in place alongside geothermal and solar powered technology, while maximising natural ventilation and harvesting precious rainwater in the arid climate. The resort’s vineyards are farmed organically using regenerative techniques which promote soil health while boosting biodiversity, enriched by organic compost waste from the zero-kilometre kitchen. Bicycles are available for guests to borrow, with recommended walking circuits and trails helping you tread lightly during your stay.

Working alongside their father, the owner’s daughters have thoughtfully furnished the interiors with traditional Argentinian design references, in addition to displaying some of their own artwork throughout. The farm-to-table restaurant is incredibly resourceful in its use of herbs from the Andes, market-sourced produce, and homegrown greens, and hosts cooking classes which delve into the relationships between terroir and plate. Casa de Uco’s clever recycling scheme includes sending used paper to a local bookshop, collecting glass for a local organisation which repurposes and sells glass sculptures in aid of cancer research, and delivering old corks from the winery to a nearby school for children to incorporate into their arts and crafts.
