Elvira’s restaurant is housed in the estate’s old farm building, a few steps away from the main hotel. Red-chequered cloths cover tables on the terrace, while contemporary art adorns the interior in a chic blend of old and new. The kitchen produces Salento-inspired dishes using mainly local produce. Make room for parmigiana, spaghetti with sun-dried tomato pesto, or the Elvira burger, which comes with a surprise twist. After dinner, head to the castle’s rooftop bar for a sunset cocktail amongst the crenellations.
