The hotel is a stepping-stone to one of the wine world’s most celebrated cuvées – and terroir that produces acclaimed rosés. Take a guided tour that delves deeper into Cabrières and the beautifully crafted cellar that produces Clos du Born, a 2018 vintage – and the award-winning Clos du Temple, 2020’s Best Rosé Wine in the World. Created by Montpelier architect François Fontès on Gérard Bertrand's iconic estates, the cellar is temple-like in its design – mirroring the pyramids of ancient Egypt. And it’s here that some of the region’s most sacred wines are produced.

Excellent room design and detail

Relaxed sophistication in a pretty area. Well signed hiking trails into the hills and vineyards which our young dog loved! Friendly helpful staff who spoke good English (my schoolgirl French can only cope with basics!) I can't comment on the food/restaurant as dogs are not permitted in the dining room, Read more[SPLIT]Read lessbut reception booked dinner for us at a local seafood restaurant which was fab. Our room (junior suite) was very spacious and comfortable with a large walk in shower. We will definitely return.

The three restaurants at Château l’Hospitalet are seasonal in every sense. Chez Paule invites guests to dine from September to May – and relish a modern, gastronomic twist on rustic recipes. From May through summer, the hotel beach club serves tapas beneath the sun – and beside the sea. And year-round, gourmet menus are the order of each day at l'Art de Vivre, setting a sublime scene for refined dining. For special occasions, and a sense-stirring experience, ask about opening times at the Moon Room – for an out-of-this-world journey of discovery. Wherever, and whenever, you dine, expect wine to be at the centre of each experience.

Art de Vivre

Served Meals: Lunch, Dinner A veritable showcase for Mediterranean art de vivre and modernity- the restaurant has been run by Chef Laurent Chabert for 08 years at Chateau l Hospitalet. He is now accompanied by Head Sommelier Pierre-Alexis Mengual- to offer a unique experience of vertical cuisine- in a completely redesigned setting- nestled between earth and sky. Open from 1st February to the 22nd December.

Jazz Bar

Served Meals: Lunch, Dinner Le Jazz Bar is open for morning coffee- afternoon tea and delicious wine cocktails before dinner or a special after dinner digestive drink.

Chez Paule

Served Meals: Lunch, Dinner Wood-fired rotisserie and local cuisine- local and seasonal products are selected from attentive local producers who share the taste for excellence. Elegant period dishes grace the tables. Soup tureens and serving dishes- also from the beginning of the 1900s- allow you to share gourmet dishes such as the Lapin Chasseur- a signature dish and what a pleasure it is to serve yourself with delicious sauces. Open from 23rd September to the 31st April.

Hospitalet Beach

Served Meals: Lunch, Dinner The choice of seasonal products. Planchas to share- vegetarian dishes- oysters from the Thau Basin- fish tartars- beef carpaccios- fresh salads- poke bowls. For the classics. The chef also favors market cuisine- according to the day s arrivals- for some top-flight dishes. The extensive wine list allows you to discover Gerard Bertrand wines- including some great vintages served by the glass for your enjoyment.

Spa

Refreshment awaits at Spa Soleilla, home to a trio of bright and spacious treatment rooms. Here, personalised facials, massage and beauty therapies are centred around globally renowned brands, including Biologique Recherche© and Holidermie – as well as the naturally inspired Japanese practice of kobido. While views across the vineyard set a sublime scene. Be sure to step into the sauna, too, for all-encompassing relaxation.
