Sustainable agricultural practices are in place across all 500 hectares of I Borghi dell'Eremo’s plastic-free, energy-efficient, organic estate. The vast surrounding wooded area is protected by high-tech fire control and anti-poaching systems, with geo-mapped trails to explore on foot or e-bicycle (with onsite charging stations powered by solar panels if you’re driving an e-vehicle). The Galletti family take a regenerative approach to the land, planting over 1,000 olive trees on barren hills, and improving the lakes and ponds around the estate for wildlife. Native grains and local plants are sown throughout the once-abandoned farms, the impressive water recovery project supplies drinking and irrigation water where needed by channelling natural resources, and compost is used to fertilise the onsite orchards, olive groves and vegetable garden. Tree-pruning waste, excess milling stone, and sustainably sourced woodchips form exclusively used biomass produced by I Borghi’s eco-combustion and innovative heating systems.
Cultural Custodians
During the extensive renovations of the ancient abbey and adjoining farmhouse, the Galletti family drew inspiration from historical archives to ensure the heritage of the Camaldolese friars (who guarded the Roman secrets of melting and artistically staining glass here at Eremo di San Giovanni from as early as the 12th century, the first to do so in Umbria) was preserved. The church itself is recognised as a historical-artistic site and is subject to cultural heritage laws. I Borghi dell’Eremo often host archaeologists who are attempting to trace the exact location of an Etruscan temple dedicated to the hunting goddess Diana, which is thought to be below the remains of the monastery (previously a 7th-century watchtower). The estate also sponsors local events, including the annual chestnut festival of Piegaro, and the medieval Palio dei Terzieri in a nearby fortress.

I Borghi dell’Eremo actively promotes local activities led by knowledgeable guides across Lake Trasimeno and its natural park, including horse-riding tours, outdoor yoga classes, and tastings at nearby wineries. The hotel staff are mostly hired from Umbria’s villages, and enjoy recommending their favourite family-run cheesemakers, butchers, florists, and small-batch vineyards for guests to visit, while local artisans and carpenters used their traditional skills during the estate’s restoration. Alongside homegrown ingredients like honey, olive oil, saffron, eggs, and vegetables, the hotel’s Essenza restaurant creates seasonally changing dishes from artisanal producers in Umbria and Tuscany, thereby keeping food miles to a minimum and supporting small local businesses.
