The raw power of Texel island radiates throughout this converted farmhouse, which lies just 150 metres from the Wadden Sea. Free-range chickens roam the wildly beautiful grounds, ‘making’ the perfect breakfast eggs, while bees hum around the fruit trees and butterflies flit between the herbal and vegetable gardens which supply the farm-to-fork restaurants where organic dishes are washed down with beer from nearby Bird Brewery, which plants a tree for every 10 litres of beer sold. From the homemade in-room vegan cosmetics and dried reusable flower arrangements to the jewellery crafted from flowers growing at the gates, there is a heartfelt connection to nature here.
Cultural Custodians
During the meticulous renovation of the 18th century farm and barn, which was once used to dry seaweed and trade oysters, great care has been taken to preserve the original features of the buildings while reusing the wooden floor and window frames and upcycling old furniture. Food is seen as a real culture here, where the chefs are putting modern Dutch cuisine back on the map and a Nordic philosophy of head-to-tail cooking infuses local produce. Almost everything is foraged, farmed, and fermented within 150 metres of Op Oost, including soft drinks, syrups and jams made from herbs and fruit found in the garden.
Community Minded
Everything at this barefoot retreat is hyper-local, with a deep rooted connection to the Wadden Islands’ farming and fishing communities. There is a strong ‘served by nature’ ethos in the atelier which puts nature’s finest on a plate. Guests are encouraged to visit Op Oost’s suppliers including local dairy and sheep farms, as well as the local farmers’ market and fishmongers to which the hotel organises trips by boat.
