Environmentally Conscious
The Venturini Baldini estate has always been run as an organic farm (and soon obtained organic certification for its winery), with practices that are rooted in regenerative agriculture. Traditional winemaking methods, organic vineyard cultivation and grape varieties are in place across these well-preserved Tuscan-Emilian hills, and the reserve’s surrounding lakes, woodland and pastures are maintained as a completely natural ecosystem. The hotel is plastic-free, naturally ventilated, and almost energy sufficient thanks to its solar panels, with electric vehicles, bicycles to borrow, and hiking maps to follow around the Parco di Roncolo.
Cultural Custodians
Home to one of the largest and oldest vinegar cellars in the Emilia region, Relais Roncolo 1888 carefully preserves 400 barrels dating back to the 17th century. The estate’s collection of condiments and balsamic pearls are produced following ancient methods, with guided tastings and visits to the historic factory on offer to guests during their stay. The hotel also hosts pasta-making classes, meet-the-winemaker workshops, and summer aperitivo evenings with local musicians at the winery. The building itself is protected by heritage legislation and filled with furniture and art by Italian artisans (with some works available to purchase in the onsite boutique).
Community Minded
The estate not only hires its team from the local community, but also has a zero-kilometre policy when it comes to sourcing produce (thereby supporting nearby farmers) for its field-to-table restaurant. Fresh, seasonal ingredients come from both Roncolo’s organic garden and regional suppliers, who are integrated into the hotel’s community-focused experiences. For example, guests are invited to visit Fattoria Rossi, a family-run dairy farm in the foothills of the Matildic Lands, to meet the artisans and sample the organic cheeses. Staff enjoy helping with the harvest, and local charities are welcome to host events at the hotel.

A grape-growing estate with sustainability at its heart, Relais Roncolo 1888 is renowned for two things: organic wine and fine balsamico. The eco-estate even has its own Acetaia di Canossa, and it’s here that guests can uncork the traditions of this deliciously sour-yet-sweet product. To get closer to the source, take a tour of the estate’s 32 hectares of vineyards. Then, swap the sun for the cool of the 17th-century Dimora Ancini, an atmospheric setting for sommelier-led organic wine tasting.
Sporting chances
Cycle off all that wine and parmesan across Parco di Roncolo, a bucolic spot for biking – with electric bikes available for those tackling the steeper trails up the Apennine peaks. Hike with a guide through the network of routes that ripple out from the hotel. Or salute the sun with private yoga sessions. A little further afield, guests can strike out on horseback, take tennis lessons or fine-tune their swing on the 18-hole golf course, Matilde di Canossa.
