Villa Petriolo’s sumptuous suites are the stars of the estate’s sensitive restoration. Striking a perfect balance between rustic and romantic, they dial up the Italian 'eleganza' with terracotta floors, four-posters, exposed beams and windows made for throwing open to the sunshine. Big, pillowy beds are perfect for lazy breakfasting – or you can head out to the terrace for coffee as the cicadas start their singing. Spritz in hand, take in movie-montage views of vineyards from the eco-conscious infinity pool, which cleverly minimises its water use. Love for the land is a founding principle of Villa Petriolo’s organic estate, which farms the finest Tuscan produce with traditional techniques. Honey from its own bees, organically reared meat, olive oil and wine are star ingredients on the menus of the hotel’s three restaurants. Savour the magic of the estate by horse-riding among the olive groves, truffle-foraging in the forests, or handling falcons in all their wild beauty. And whilst you can’t bottle memories, you can get close, by bringing home some of Villa Petriolo’s extra virgin olive oil in your suitcase.

This 15th-century GSTC certified farming estate is organic to its core and immerses guests in its agricultural roots through nature-based experiences and by celebrating all things traditionally Tuscan. Free-range livestock roam the 170 acre grounds, a bucolic patchwork of woods, vineyards, and pesticide-free fields sown with ancient grains which supply the villa’s 0km kitchen. Agricultural waste is converted into animal feed, water is heated by 100% in-house solar energy then reused to irrigate the gardens which are exclusively home to Tuscan plants, and a purifier has been installed in the lake to create a small ecological oasis for fish and waterfowl while also serving as a renewable water source. Guests are encouraged to explore the 15km network of trails which criss-cross the plastic-free property on foot, horseback, e-bicycle or e-cars (which are recharged using the villa’s solar panels), and to support the hotel’s project with Save the Planet to create a reforestation area by purchasing and planting trees through crowdfunding.

Villa Petriolo itself is a historical building which has been painstakingly renovated and restored by local artisans, to showcase authentically Tuscan architecture and high-quality craftsmanship – including some magnificent 17th-century frescoes. The artwork, the furniture, the decoration? All Tuscan. As is the food, which is the very definition of ‘farm fresh’ while delving into the region’s rich culinary traditions, from cooking classes and tasting sessions of honey, wine and olive oil produced on-site, to truffle-hunting with a local guide and his friendly dogs. The centuries-old foraging for this natural ‘white gold’ has been passed down the generations and is regarded as an art form in Tuscany, one which guests can experience for themselves on the estate, followed by a delicious truffle-based snack in the osteria. Villa Petriolo also invites local bands to the estate for live music nights, as well as giving away complimentary tickets for guests to attend local folk festivals.

With regionality as its main focus and philosophy, Villa Petriolo takes a 0km approach to every part of its organic offering – including hiring staff and and management exclusively from the surrounding villages (within 20km of the estate). Every single certified supplier and partner is carefully handpicked solely from Tuscany, including the fish which is caught along the Tuscan coast. The estate organises ‘transhumance’ experiences - a seasonal movement of livestock between summer and winter pastures – with a neighbouring shepherd, who shows guests how to respectfully tend his flock, milk the animals (which is used for the preparation of the villa’s cheeses) and finally welcomes guests into his home for a wine and cheese tasting. Villa Petriolo is also home to the Ancient Tuscan Falconry, a group of young people who, under the expert guidance of falconer Andrea Frizzi, aim to build a greater awareness for the protection and conservation of these birds of prey.

Saddle up for a new perspective of the countryside on horseback, stopping en-route for wine tasting and antipasti. Hunt down Tuscany’s ‘white gold’ in the woods with a local truffle-hunter and his dogs, before sampling the prized fungi at the Osteria. While all the family will get a thrill from playing falconer, looking into the eyes of the estate’s birds of prey.

Villa Petriolo’s three restaurants showcase different sides of Tuscan cuisine. PS Ristorante holds a Michelin Green Star, paying artful homage to Tuscan food (and has a Michelin star to show for it). The restaurant is part of the “Forest for the Planet” project, donating five hectares of its own woodland to offset the harmful effects caused by CO2 emissions. Dishes filled with bold, rustic flavour are served under Osteria di Golpaja’s brickwork arches, to the gentle glug-glug of Chianti being decanted. And you can sample a little of all the estate’s organic produce at La Bottega di Petriolo, from focaccia to cheeses, all washed down with a glass of good wine – and a to-die-for sunset view.

A little Bistrot and a little gastronomy - Bottega di Petriolo is all this - an overwhelming mix ideal for small dinners and special aperitifs. Here everything is super local because we believe it is good to join forces with the best local producers. From gastronomy products to wine - from craft beer to liqueurs - everything is made and produced by the Fattoria di Villa Petriolo. From the earth to the table - carrying on our Green philosophy. Served Meals: Breakfast, Lunch, Dinner The Osteria di Golpaja is a characteristic restaurant that represents Tuscany in its true essence. Typical dishes that recall the flavors of a rustic land but lively and colorful characteristic. It is precisely here that you can savor the real Tuscany as it once was - like that of our ancestors - authentic and direct with strong but delicious flavors just like our hilly region.

A restaurant with its own personality that enhances it and shows it in every space - not only in the food but in the experience as a whole. A restaurant worthy of a Michelin star - led by Chef Stefano Pinciaroli - purposeful and innovative food that takes up the cuisine of the region being a destination point in Tuscany. Dinner is served only from Monday to Saturday.
